Cabbage Soup
First Saturday Supper of the New Year!
My Uncle Jim’s healthful Cabbage Soup. It’s REALLY good on this icy day. I threw in a bunch of fresh basil and spinach and used a lot more tomato paste than his recipe called for. He turned to this soup every January after weeks of hearty holiday eating, and I am taking his lead this year. Goes great with a Honey-Roasted Beet Sandwich. I am delighted to be able to share Uncle Jim’s recipe, here:
Cabbage Soup
3 cups non-fat vegetable broth
2 garlic cloves, minced
2 bunches of green onions, chopped
1 tablespoon tomato paste
2 cups chopped cabbage
1/2 yellow onion
1/2 cup chopped carrot
1/2 teaspoon basil
1/2 teaspoon oregano
Salt & pepper, to taste
Spray pot with non stick cooking spray (I use a mix of 2 tablespoons butter and 2 tablespoons extra virgin olive oil), saute onions, carrots and garlic for 5 minutes.
Add broth, tomato paste, cabbage, basil, oregano and Salt & Pepper to taste.
Simmer for about an hour.
