Russian Tea Time Style Tashkent Carrot Salad

One of my dad’s favorite places in Chicago was Russian Tea Time! I hadn’t been in years, and made a point to visit the other day. We were almost through our meal when I remembered the Tashkent Salad. It is one of my favorite things in the world. 

I looked online, and cobbled together this recipe, which I think is very similar. 

This salad is bright, colorful, and full of the perfect amount of flavors! You can be flexible with whatever spices you have on hand. 

From cumin to carrots and more, this side salad is packed with flavor and health! 

Tashkent Carrot Salad

Yield: 8 servings

2 pounds carrots, peeled and shredded

1 teaspoon cumin

1 teaspoon granulated sugar

¼ teaspoon pink Himalayan sea salt

¼ teaspoon freshly ground multi-colored peppercorns

1 teaspoon hot Hungarian paprika

2 cloves garlic, minced

1 tablespoon extra-virgin olive oil

1 tablespoon white wine

In a food processor, shred the carrots.

In a medium bowl, mix all of the ingredients together well.
