Sweet & Sour Red Cabbage

Made mom’s sweet & sour red cabbage today! This time of year she would be cooking up a storm of it in her kitchen. Red cabbage is great on autumn classics like beer brats, chicken schnitzel sliders (pictured here) and more. Serve it as a side or on a sandwich. A simple, colorful and delicious way to get Oktoberfest on a plate when you can’t get to Deutschland!
Have fun with this- I couldn’t find apple 🍎 cider vinegar so used Champagne 🥂 vinegar & worked great!

“Eyeball” amounts of ingredients are perfect in this classic German recipe.
Dissolve 1/2 cup packed brown sugar & 1/4 cup white sugar in 1 cup vinegar. Combine 1 medium head of red cabbage, chopped; 1 cup chopped & peeled apples & 1/4 chopped red onion; coat with vinegar & sugar mixture. Fry 4 slices of bacon 🥓 in cast iron skillet. Add cabbage mixture to bacon in skillet and cook down for 30 minutes.
Nestle beer brats in the cabbage & bake in Dutch oven for 40 minutes.
Chicken Schnitzel Sliders: Coat chicken breasts in eggs, followed by crushed season croutons; bake for 40 minutes. Place chicken on pretzel roll with honey mustard and cabbage.
