Strawberry Therapy!

It’s so important to make the most of the fleeting season of mouth-watering strawberries!
I track few things more closely than the opening day of the local u-pick strawberry farm! I make a fresh strawberry pie like the one that my mom’s friend Vicki made for our family every year since the 70s. For this year’s pie, I used a hand mixer on medium speed to beat together juice from 2 fresh 🍊 oranges, 2 tablespoons sugar & 2 packages of cream cheese. Bake a pie crust in a greased pie plate & let cool. When cool, spread cream cheese mix in the pie shell. Add 2 cups of strawberry 🍓 halves. Top with strawberry glaze- Mix 1/2 cup sugar, 2 tablespoons cornstarch & 1/8 teaspoon salt in a small saucepan over medium heat. Slowly add 6 tablespoons cold water. Stir until smooth. Add 1 1/2 cups crushed strawberries. Cook the mixture, stirring over medium heat. Bring to boil; then stir 1 minute. Remove & cool. When cool, pour over berries in pie shell. The cream is just a carton of heavy whipping cream beaten with 3 tablespoons of sugar.
