Sicilian Cauliflower Soup

Violets & Groundhogs!
Groundhogs LOVE violet leaves, and so this year for Groundhog Day, I made a violet-colored soup using Sicilian cauliflower, which is purple. So fun and yet healthful, too!
I used my new violet dishes, which I ordered from Replacements Ltd. My mom had the whole set of these dishes, and I adored them!
Regardless of the outcome on February 2, Groundhog Day is a great time to start thinking about 2021 garden plans! This coming week my mom would already be leafing through her seed catalogs, forcing bulbs to start growing in the sunroom & more!
“Violets & Groundhogs” Sicilian Cauliflower Soup
2 tablespoons butter
2 tablespoons extra virgin olive oil
1/2 red onion, chopped
2 large cloves of garlic, chopped
3 heads violet (purple) cauliflower
2 cups vegetable broth
Pink Himalayan sea salt and freshly ground pepper, to taste
2 bunches tarragon
Toasted pine nuts or candied walnuts (enough to sprinkle on top of each bowl of soup)
In a Dutch over on stovetop over medium heat, heat oil and melt butter; add onion and garlic.
Add cauliflower. Sauté until tender, about 15-20 minutes; add broth. Add salt and pepper. Cook until heated through well, about 15 to 20 minutes. Pulse in blender until well blended, about 6 pulses. Garnish with nuts and tarragon leaves.
