Sea Bass with Sicilian Cauliflower and Steamed Spinach
Happy May Day! My birthday month and absolute favorite month of the year! Celebrated 1st day of plant sales – and fresh herbs again, finally! – with a beautiful, special Pan-Fried Sea Bass with Sicilian Cauliflower Mash and Steamed Spinach. Loaded with color! Seasoned the fish with paprika and cayenne.
I got inspired to make this recently watching Caroline Somers make this in her recent IG Video. Her recipes are fantastic and so full of wonderful and healthy ingredients! You will love her posts.
Couldn’t wait to use the gorgeous new dill and chives plants that I bought this morning during my annual spring visit to Petal Pushers Garden Center in Channahon! Their slogan is: “Decorate your life with plants!”
Sea Bass with Sicilian Cauliflower and Steamed Spinach
2 sea bass fillets
Freshly ground black pepper
Pink Himalayan sea salt
Paprika
Cayenne powder
6 lemons
1 small head Sicilian cauliflower
6 cups spinach
1/4 small red onion, sliced
2 garlic cloves, minced
Fresh dill
Season fillets with salt, pepper, cayenne and paprika.
In frying pan on stovetop, heat oil and three tablespoons butter. Place fillets in frying pan. Using tongs, flip fish after five minutes. Squeeze juice of 3 lemons over fish. Use a spoon to scoop sauce over fish while it cooks.
While fish is cooking, steam spinach with onions and garlic. Optional: sauté spinach in olive oil in frying pan on stovetop.
Cut cauliflower into small pieces and steam. Use a potato masher to mash cauliflower with remaining butter.
Plate and garnish with herbs.
