Roasted Tomato Sauce

I felt so bad for a co-worker who told me that her mother made spaghetti with noodles and ketchup. It is such a shame that that she did not realize how incredibly quick and easy it is to make homemade tomato sauce from scratch.

Growing up, my mom used an envelope of Lawry’s sauce mix. That’s about all there was available in the 70s. It took years for her to switch to canned sauces when they came out.

I’ll never be able to eat canned sauce again, now that I started making my own sauce completely from scratch. It’s such a terrific way to get fresh tomatoes into your diet, which are loaded with vitamins A, K, and C; and potassium.

Fill up a bag of tomatoes at the store – (I love the vine tomatoes) – cut them into small pieces and roast them in the oven for about an hour with olive oil, salt and pepper; garlic and herbs. So delicious and good for you!

Roasted Tomato Sauce

8-10 medium tomatoes, chopped

3 tablespoons olive oil

2 tablespoons dried herbs- Herbes de Provence

2 garlic cloves, finely chopped

Freshly ground pepper and pink Himalayan sea salt, to taste.  

Place tomatoes on a cookie sheet lined with parchment paper. Spread tomatoes out evenly.  

Drizzle oil over tomatoes. Sprinkle herbs, garlic and salt and pepper.   

Bake in 420-degree oven for at least one hour, stirring occasionally. Remove from oven and smash with a large spoon.
