Pulled Peach Chicken Sandwiches for Sweet Georgia Peach, Fritz!
Today our “sweet peach” Fritz is celebrating his FIRST birthday- so Pulled Peach Chicken Sandwiches for Sunday Supper! Fritz was born near Atlanta, Georgia and he wore a peach-colored collar. Turns out, he’s also the sweetest little Georgia peach there ever was! Love this bundle of joy so much!
To make these Pulled Peach Chicken Sandwiches, cook up 4 cups of chopped peaches in 2 cups water, 1 cup sugar and a tablespoon of corn starch. Cook until corn starch is dissolved and mixture is thick. Use this mixture to baste the chicken on a baking sheet, just like you would use barbecue sauce. Get the chicken baking first- coat with olive oil and sprinkle with freshly ground pepper and pink Himalayan sea salt. About 30 minutes after baking on 350 degrees, brush on peach mixture and bake another 30 minutes. Brush peach mixture on chicken again and bake for another 30 minutes. When cooked through, pull chicken for sandwiches.
