Today’s Pollinator Week post: Pollinator Pasta!
I was de-lighted to stumble into these darling little butterfly pastas on my latest trip to Whole Foods in Naperville! Right in time for Pollinator Week!
I made a honey-lemon dressing with shallots and made a pretty, summery pasta salad with my first herb garden harvest of fresh basil, chives, bright, cheery dill blossoms and parsley! I added some fresh corn from the cob and diced red peppers. Colorful, light and oh-so fresh!
I love this honey from Maple Orchard Farms in Merrill, Wisconsin- could eat it by the tubs! I put a sprinkle of sugar in almost everything- to-night it was a drizzle of honey instead!
Honey-Lemon Salad Dressing
1/2 cup extra virgin olive oil
1 tablespoon honey
Juice from 2 whole fresh lemons
1/2 teaspoon pink himalayan sea salt
1/4 freshly ground peppercorns
1 shallot bulb, finely sliced
Place all of the ingredients in a salad dressing shaker and shake for about 20-30 revolutions. Pour over dressing and lightly toss into salad.
Optional: 1 clove garlic, minced or finely diced
