Pineapple-Lime JELL-O® Star

The Star of The Show!
My mom’s Christmas dinner table was never complete without her Pineapple-Lime JELL-O® Star! JELL-O® molds are NOT easy to make! One trick I learned this year is to dip the mold in a large bowl of hot water if it is not releasing the JELL-O®. I’m pretty sure I came happily close to her recipe with this adaptation:
Pineapple-Lime JELL-O® Star
2 ½ cups water
1 6-ounce package lime JELL-O®
1 8-ounce package cream cheese, softened
1 8-ounce can crushed pineapple, undrained
1 cup pineapple juice
½ jar Maraschino cherries
In medium-size kettle on stovetop, bring 2 cups of water to boil. Stir in JELL-O® until dissolved.
Pour over cream cheese and mix until blended completely.
Add crushed pineapple and pineapple juice; 1/2 cup cold water and cherries. Stir to blend all together well.
Pour into mold and refrigerate until set (about 4 to 5 hours).
When JELL-O® is set, place serving plate over mold before flipping. If mold does not release JELL-O® right away, dip into large bowl of hot water for a few seconds. Jiggle until mold releases JELL-O®.
