Pecan Pralines
When you make them to give as gifts for Fat Tuesday, you can “yes” to one or two Pecan Praline treats! That’s the best strategy for staying on the health and wellness course through Mardi Gras and still honoring this centuries old Big Easy tradition.
Pralines came to New Orleans with French settlers, and were adapted to the candy that we know now when local pecans and brown sugar. Almonds are an alternative to pecans.
Pecan Pralines
2 cups pecans
2 cups light brown sugar
1 cup heavy whipping cream
1/2 stick butter
1 teaspoon vanilla extract
1 pinch of pink Himalayan sea salt
Spread wax paper on countertop.
Combine all ingredients in microwave-safe bowl. Microwave on high for 7 minutes. Take out and stir well. Put back in microwave on high for 5 more minutes. Remove and stir. Drop spoonfuls of mixture in round shapes on wax paper. When cool, wrap pieces individually in small pieces of wax paper and put in clear plastic candy bags to give as gifts.
