Mustard Seed Coq au Vin
Happy National Seed Swap Day! The first National Seed Swap was hosted in 2006 by a garden club in Washington, DC. Sure brings hopeful thoughts of spring just hearing about it!
Started my day with a gardening meeting for work & now cooking with plenty of mustard seeds in my Dijon Coq au Vin as the snow rolls in. House smells amazing & feeling so blessed to be able to be inside.
Mustard Seed Coq au Vin
2 tablespoons extra virgin olive oil
1 tablespoon butter
1 fresh garlic, minced
6 boneless, skinless chicken breasts
2 bunches of fresh tarragon
3 cups white wine
4 tablespoons whole grain mustard
2 tablespoons Dijon mustard
6 carrots, peeled
1 red bell pepper
2 tablespoons honey
1 ginger root, peeled and thinly sliced
2 teaspoons pink Himalayan sea salt
1 teaspoon freshly ground black pepper
In Dutch oven on stovetop, heat oil and butter with garlic and brown chicken. Add remaining ingredients and simmer on medium heat for 45 minutes to one hour.
Serve over rice or with a lettuce salad.
