The star of our Raiders of The Lost Ark party: Morrocan Rice!

I’m obsessed with this Morrocan Rice ever since I made it for a Raiders of The Lost Ark party my friend Sally and I put together. We had such fun planning the menu for months. We watched the movie for the umpteenth time, taking diligent notes along the way through to try to capture the most interesting food-related points. 

This rice dish would be delicious for a special party or mid-week supper! 

Morrocan Rice

Yield: 12 small-plate servings

2 cups basmati rice, rinsed and drained

1 large red bell pepper, cut into 2-inch strips

1 large green bell pepper, cut into 2-inch strips

1 medium onion, chopped

2 cloves garlic, minced

2 tablespoons extra-virgin olive oil

1 tablespoon ground cumin

1 teaspoon ground coriander

1 teaspoon ground turmeric

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground cardamom

¼ teaspoon Himalayan pink sea salt

¼ teaspoon freshly ground multi-colored peppercorns

3 ½ cups vegetable stock

½ cup raisins

3-4 dates, pitted and rough chopped

½ cup blanched almonds, toasted and roughly chopped

½ cup fresh parsley, chopped

Preheat the oven to 350°F.

Cook the rice.

In a small bowl, combine the bell peppers, onions, and garlic, and stir in 1 tablespoon of the olive oil. Place in a 9-inch-square baking pan, and roast in the oven until softened and lightly browned around the edges, about 40 minutes.   

In a large bowl, combine all of the ingredients together, reserving the almonds and parsley for garnish.

Garnish with almonds and parsley on top.
