Lemon Thyme Bars
With just the perfect tang, these bright, flavorful bars are chock full of one of my favorite ingredients: lemons! They are made with freshly squeezed lemon juice and a bit of lemon zest.

One of my favorite ways to use lemons is these bars! This recipe was a favorite of my mom’s, and I was so touched when her very special friends with the Thymekeepers Herb Club made these bars for her celebration of life! What dear and special friends.
Lemon Thyme Bars
Yield: 20 servings- 1 1/2 x 2-inch bars
For the Butter Thyme Crust:
2 cups all-purpose flour
2/3 cup confectioners sugar
2 1/2 teaspoons dried thyme leaves
1/2 teaspoon salt
1 cup butter or margarine
For the Ginger-Lemon Filling:
1 1/4 cups granulated sugar
3 tablespoons all-purpose flour
3/4 teaspoon ground ginger
1/2 teaspoon baking powder
1/2 cup lemon juice
3 eggs, beaten
2 teaspoons lemon zest
For the Lemon glaze:
3/4 cup confectioners sugar
3-4 teaspoons lemon juice
To make the Butter Thyme Crust:
Preheat the oven to 350°F
In a medium bowl, combine the flour, confectioners sugar, thyme, and salt. Add the butter and mix with a pastry blender, fork, or fingers until well incorporated. The mixture should be coarse and lumpy. Set aside 1 cup of the crumb mixture. Pat the remaining crumb mixture into a greased 13x9x2-inch pan. Bake until the crust is lightly brown all around, about 12 to 18 minutes. Remove from the oven, and set on countertop.
To make the Ginger-Lemon Filling: In a medium bowl, combine the sugar, flour, ginger, and baking soda. Add the lemon juice, eggs, and lemon zest; whisk until blended well. Pour the lemon filling over the warm baked crust. Sprinkle the reserved crumbly mixture over the lemon filling. Bake until filling is set, about 20 to 25 minutes.
To make the glaze: Stir the ingredients until they are well combined.
Remove the bars from the oven when they are set. Place the bars on the countertop, and add the glaze.
