A Salad for Fat Tuesday?

Yes! With all of the flavors of a classic New Orleans Muffuletta sandwich, this salad let’s you stick to your health and wellness plan and still let “les bon temps roulez!”

I made this with beautiful, fluffy green Romaine lettuce leaves, pimento olives, giardiniera, roasted red peppers and a red wine and olive oil dressing.

The muffuletta sandwich is one of the most recognizable foods of the “Big Easy,” but was born in an Italian Deli. Sicilian immigrant Salvatore Lupo is said to have created the beloved Fat Tuesday favorite in 1906 at Central Grocery Co. on Decatur Street in New Orleans.

Muffuletta Salad

2 bunches Romaine lettuce

1/2 12-ounce jar mild giardiniera 

1/2 12 ounce jar pimento olives

1/2 8 ounce jar roasted red peppers in oil

1/2 cup mortadella, cubed

1/2 cup provolone, cubed 

1 cup mild salami, cubed

Chop lettuce into bite-size pieces, add toppings and dressing and toss.  

Red Wine Vinegar Dressing

1/4 cup red wine vinegar

1/2 cup extra virgin olive oil

1 pinch pink Himalayan sea salt

1 pinch freshly ground black pepper 

Mix all ingredients together thoroughly.
