Chilled Peach Soup with Mint

Georgia on my mind!
Aunt Carole said the peaches from the Tree Ripe Fruit Co. truck were like the peaches she remembers from her childhood in the 1940s. When I heard the peach truck would be here from Georgia, I took annual leave from work to be one of the first in line.
I made a peach cake and this peach soup right away.
This soup is so lovely, tasty and refreshing- on a sweltering summer day after waiting in line for peaches, or any day!
Chilled Peach Soup
6 peaches, cut into chunks
2 cups plain yogurt
1/4 cup fresh mint
Juice of one fresh lemon
Clean away red centers from peach chunks.
Place all ingredients in blender and pulse until blended well.
Pour into bowls. Garnish with slivered peaches, fresh mint leaves and a trace of yogurt.
