Cheesy Potatoes
These cheesy potatoes are a cinch to make and they’re like a loaded potato for Christmas dinner without having to pass around all of the condiments.
This is a basic, standard recipe, and I added a diced red bell pepper for color and a beautiful, fresh flavor.
This is a great side with ham, tenderloin, turkey or any holiday entree.
Cheesy Potatoes
32 ounces frozen hashbrowns (thawed)
½ cup unsalted butter, melted
10.25 ounce can cream of chicken soup
16 ounces sour cream
½ cup finely chopped yellow onion (about 1 small onion)
8 ounces cheddar cheese (shredded (about 2 cups))
1 red bell pepper, diced 1 teaspoon salt
½ teaspoon black pepper
In large bowl, mix all ingredients together and place in two buttered pie plates. Bake in 350 degree oven for 45 minutes or until edges are golden brown.
