Blueberry Margaritas
Raise a glass to health when you’re trying out that new bottle of special tequila. This Blueberry Margarita recipe is a great-tasting way to honor the 5th of May and has all the nutrients of a blueberry smoothie. Blueberries are loaded with Vitamin C and they are also great source of vitamins A and B-6; magnesium, iron and fiber. A terrific antioxidant!
Scratch and fresh is so much better than frozen mixes.
This batch tastes so great with my Shrimp Tacos. Accented with gorgeous sprigs of cilantro from Petal Pushers Garden Center in Channahon, Illinois!
Blueberry Margaritas
(Makes 2 Margaritas)
4 cups frozen blueberries
2 jiggers tequila
1 jigger triple sec or cointreau
Juice from 4-6 fresh limes
1 cup ice
1 tablespoon honey
In the blender on high speed, blend blueberries with tequila, triple sec or cointreau; lime juice, ice and honey.
Optional: Coat rims of glasses with pink Himalayan sea salt.
