Barbie’s Marshmallow Fudge

Pink fudge was the paw-fect sweet treat for Violet’s Barbie-themed 3rd birthday party! 

For sweet Violet’s 3rd birthday – in a year that’s been everything Barbie – we had to have a party with Barbie-themed foods and plenty of pink!

These fudge treats are simple to make and fun to serve! A little pink food coloring brings the bling to these white chocolate-forward, marshmallow-y bites.

Serve them in sqauares on a little plate or in a slab like the fudge shops, with a dull knife for guests to cut away their own fudge. 

Place the fudge on a sweets table with other pink treats Barbie would love, with a big bright pink Barbie birthday cake in the middle of the assorted treats. I bought the Barbie-font birthday cake sign on Etsy. 

Barbie’s Marshmallow Fudge

2 11-ounce bags white chocolate chips

1 14-ounce can sweetened condensed milk

1/2 teaspoon vegetable oil

1 tbsp pink gel food coloring

1 cup mini marshmallows

1/3 cup chopped walnuts

1 cup rainbows and hearts from Lucky Charms cereal

1/3 cup gold edible sprinkles

In a large bowl, microwave the chocolate on high for 90 seconds. Stir the chocolate and return it to the microwave until it is completely melted and smooth, about 20-30 seconds.

Remove the bowl from the microwave and add the food coloring. Stir well to combine until there are no streaks. For more color, add more food coloring.

Add the marshmallows and walnuts, and stir to combine well.

Pour the mixture into a parchment-lined 9X9-inch cake pan. Use a spoon to smooth out the top of the fudge. Spread the sprinkles on top, and refrigerate for at least 1 hour.
