Springtime in Paris…in Northern Wisconsin!
This time each year I miss springtime in Paris so much! Even on a cold, rainy April day, there is magic all around!
This Salade Niçoise is an answer Paris withdrawals. It’s so easy to make, and it is of-so colorful and delicious. It makes healthy eating so much more fun!
Bake a tuna steak, blanche some green beans, roast some baby red potatoes, and boil some eggs. Hard-boiled or soft-boiled eggs are great in this!
Olives are a must in a Salade Niçoise. I ordered Nicoise olives from Nice, France, but any olives you love will work great.
A classic Salade Niçoise has plenty of fresh tomatoes, and I found some gorgeous heirloom tomatoes for this salad at Pick and Save. You can use any tomatoes you love!
Dijon Mustard Dressing
Yield: 6 servings
¼ cup Champagne vinegar
¼ cup extra virgin olive oil
2 Tablespoons Dijon mustard
½ teaspoon pink Himalayan sea salt
½ teaspoon freshly ground peppercorns
Combine all of the ingredients in a salad dressing shaker, and shake vigorously until well blended.
